What makes bronze-die pasta different?

Pasta is extruded through a die that gives each shape its form. Bronze dies leave a rough, porous surface; Teflon dies leave a smooth, glossy one. The rough surface holds sauce and releases starch into the cooking water, which helps the sauce bind. Artisanal producers also dry pasta slowly at low temperature, often over 24 to 48 hours, which protects the flavour of the durum wheat and gives a firmer bite. Fast, high-temperature drying is cheaper and produces a harder, more uniform product that holds less sauce.

Which rice is used for risotto?

Italian risotto rice comes from the Po valley, mainly Piedmont, Lombardy and the Veneto. The main varieties are:

  • Carnaroli: the chef's choice; large grains, high starch, holds its shape through long cooking and holding
  • Arborio: widely used, cooks slightly faster, creamier and softer
  • Vialone Nano: smaller grains from the Veneto, suited to looser, wave-style risotto
